O.K. heres my revue of the Smoked Chicken Frittata. It would be far better in my opinion, if we remove Wattie's O'Brien Recipe Mix. My reason is I can not stand that 'over rated' capsicum. This is over done in this mix. I also felt that Feta Cheese could be replaced with a grated cheese of your choice. My reason is that Feta is very salty. This is also a individual choice.. So now I have ripped the original recipe apart, go for what ever is a fair thing. LMAO. ;D ;D Footnote: I will defineately make this again with my recommendations. ;D ;D

Good to know - hubby also hates capsicum and won't eat anything with that in it. However we both love the saltiness of Feta so we'd probably keep that in. What would you use instead of the Watties O'brien mix?

Just pre steam some mixed frozen veges and diced par cooked potatoe. In fact that is what that Watties stuff is with the capsicum scattered through it. ;D

ORIGINAL COCA COLA CHICKEN I use nuggets or wings. Mix together 2 cans of coke, 1/4 cup soy sauce and a sprinkle of garlic salt. Place chicken in frypan(pref electric)and pour mix over. Simmer on med heat for 10-15mins, then remove chicken. Turn up heat and reduce sauce some, place chicken back in and lower heat and cook for another 10-15mins, turning constantly. Sauce will thicken while reducing and coat chicken with a sweet sticky substance. Tis lovely and the kids love it. You can also use drumsticks,spareribs etc

Easy Peasy Bread RecipeThis recipe comes from an Romanian woman who gave it to one of my friends: This bread recipe has no exact measurements for the ingredients. Add about 1kg or 4 cups of flour in a mixing bowl. Dissolve yeast (approx 1 – 2 teaspoons) in a cup of warm water and wait till the yeast is “bubbling”. Yeast likes sugar so you could add a teaspoon of sugar. Add the “bubbling” yeast mixture to the flour and start the mixing machine. If the dough is too dry you add some water if it is too wet you add some more flour. The right consistency for the dough is when the dough is no more sticking to the bowl (see picture 2). But the dough should be still too wet to be kneaded by hand. This kind of dough will make light and fluffy bread with a nice crust on the outside. The dough should be kneaded in the mixing bowl for a few minutes. 1. Add “Bubbling” yeast and salt to the flour in the mixing bowl 2. Flour and/or water added till the dough is no more sticking to the mixing bowl but is still too wet to be kneaded by hand 3. Cover with a tea-towel and leave to rise for 1 – 4 hours 4. Turn over the dough in heaps of flour and immediately place on a floured baking tray and slide it in the hot (250°C) oven. The bread will be going flat if you wait too long before putting the tray in the oven 5. Baking: 10 minutes at 250°C, then reduce to 200°C and leave for 25 – 35 minutes This dough can be used for buns (reduce baking time) or for pizzas.

oh and I wanted to say thank you for bringing me on the right track with making a proper Rösti.... I was struggling for 10 years until Oasis mentioned that you use red potatoes.... BINGO ;D ;D ;D thanx O

This dish can be eaten as savoury or as a sweet. I often make it for my lunch Omlette (Swiss Style)2 tablespoons flour 100ml milk A pinch of salt 1 egg Mix all the ingredients and leave them in the fridge for half an hour. Use a frying pan with a little oil and pour the mixture into the pan. Cover with a lid and fry them both sides till golden. The above mixture makes one big omlette or two small ones. I like to add some finely chopped fresh herbs, some like them with small bits of cheese or ham. Or they can be eaten with icecream or fruits or just with sugar and cinnamon. I think the French only fry them on one side and flip half over, the inside of the omlette is still soft.

I am sure Manuela knows this one! Dying EggsThis can be a fun thing for a rainy day. You need: Onion skins (dry ones) Eggs (best is white ones or light brown ones) weeds, clover, grasses Old pantyhose Scissors Heavy thread First put a pot with water approx 1 – 2 liters and boil the onion skins for half an hour. Add a good splash of vinegar. Prepare the eggs: Cut square pieces out of a pantyhose and lay freshly picked weeds, clover and/or grasses in the middle of the square. Put an egg on top of the weeds and pull the four corners of the pantyhose together. Tightend the pantyhose as much as you can and fix it with some heavy thread. Put all the eggs at the same time into the onion pot and boil the eggs with the onion skins for about 10 minutes. Remove the eggs and put them in some cold water. Cut off the pantyhose and remove the weeds. Rub the still warm eggs with a piece of fat from some bacon or if you don't have any rub them with some butter. It makes them nice and shiny. Rub them with a clean rab to remove access fat. We serve them in Switzerland for Easter.
