Spent a bit of time yesterday gathering some of my black doris plums before the birds get to them. Have not got much time at the moment so I put them in the freezer to make either wine or chutney. Once those birds get a taste they go from one fruit to the other punching holes in them. Same with grapes, destructive blighters.

Last night we opened the bottle from my wine maker tutor. It was a elderberry from 1981!!!! And it was beautiful it tasted like port.

Well I picked up the ingredients the other day from the homebrew shop to make a Rum & Coconut Liqueur, should be nice as I do like both seperately,so combined sounds interesting. They tell me it has a good feed back from other customers. Pictures oneself sipping it under a shady tree and dreaming I am in Jamiaca. LMAO.

Ivyplus, can I pick ya brains. This is stupid from moi thinking I know all about wine, but I have only made semi dry still wines and enjoyed. But I would like to make this next plum wine a sweet still one, How do I go about it. Please. We learned at the course to put more sugar in (for a sweet wine) and leave it till it totally stops fermenting. You could add more surgar even after a few months. The teacher encouraged us to start with about a third of the recommended sugar, wait till it nearly stops, rack it off and add another third leave it and add the rest as soon as it nearly stops fermenting. I can remember he said wines which ferment slower are better.

BTW - I think you could buy something to stop the fermenting process. To be sure that the yeast doesn't attack your sugar!

Made an add in the local paper: Rhubarb plants wanted
And had already two phone calls.
I want to plant heaps of rhubarbs I like the rhubarb wine. When I was racking it off the last time I had to taste and it was quite good. ;D
