Hi Guys this threads is for you to post in your recipes and ask questions regarding homebrewing. This could be beer, wine , spirits, and your favourite liquers. Also non alcholic drinks that would go down great for our sober drivers, we need to look after them. LOL

Excellent thread idea meandog, I'm sure ivyplus will be keen to share some of our brewing recipes and tips.
We have almost perfected a beer that everyone is commenting as being very similar to monteith's Radler.

Yes, I am really happy about this thread. My main problems with homebrewing is how to replace chemicals with natural ingredients, like black tea for tannin. Do you know anything about replacements of chemicals. What would you use for nutrients for the yeast? Looking forward to any suggestions.

I do not know about natural ingredients, but have several mates that love to experiment and I will see what I can find out for you it may take 2-3 days for this info. I have done a lot of brewing but only used the kitsets. I have now moved onto the "moonshine" and having a lot of fun stilling and of course sampling.LOL

Thanks for that. I love making homebrew. I have never heard about fruit wines till I came to New Zealand. Then I went to a winemaking course and now I am hooked. Last year we planted hops and make now our own beer (all natural ingredients). The latest brew tastes like Radler (friends tell us) and today we bought some Radler (Monteith) and will have to test both this evening. So please excuse us if we......

LOL ... ullo there meandog ... I agree with the others - that dog doesn't look that mean - trying to make a good go of it tho!!!! Neat thread and really cool to have u here - was going to invite u - seems someone bet me to it!!! I make a mean plum wine (well used to before I lost the recipe) and my bro does nice top shelf stuff! So this thread will be just great!

I have a recipe for boysenberry beer that is very nice,just lets know if you would like it posted. It is made with a kitset and tinned boysenberries.

CAPE GOOSEBERRY WINE Amounts for 1 gal.2lb Cape Gooseberries,3 lb sugar,Pectolase,Juice of 2 lemons,Yeast (Champagne type)Water.1/Mash fruit,cover with sugar,add pectolase and leave over night.Aim for 10% alcohol by volume.2/Add boiling water and lemon luice.3/Leave to cool,add nutrient salts and yeast,ferment on the fruit for 5-7 days.4/Rack off from fruit,fit airlock and fermant as per normal.NOTE:This is a fruit that appears to take boiling water without becoming hazy.

I will add some tinned boysenberries to our next brew. It is amazing how many different beers you can make. I will also try to add dates to one of our brews. Why don't you try to make beer from scratch? We only make very easy brews and start to get more suffisticated as we go. It's the time now to buy hop plants and start growing them. They will grow every year again.

My grandmother grew hops here in Auckland and got a tremendous crop from them. My father grabbed them and made Homebrew, but in those days that was when Homebrew developed a bad name with all the failures, being made in the old washing machine bowls. Open to all the wild yeasts that float around. There is no doubt the sterile fermenters and air locks are the only way to go.

Yes it is important to have everything very clean or wild yeasts and other bacteria could develop. So far we where lucky.

I have had one failure with wine making. I used a wooden spoon to stir the must and this wooden spoon I usually use to make riccotta (which uses vinegar). This tiny bit of vinegar on the spoon turned the "young" wine into vinegar. But no worries - I kept the wine and added some vinegar bacteria (we call this: Essigmutter). It is now developping into some wine vinegar.

1can Mac’s Lager,1 can Boysenberries in juice add to fermenter and brew as normal Makes 11.5 litres.Can double up on recipe.

HONEY LIGHT BEER 1 can Mac’s Pale Ale, 0.5 teaspoon grated ginger, 1.5 cups honey, to 2 litres of water and bring to the boil.Pour into fermenter,add malt and top up with cold water. Add yeast and ferment at cool temp. 12-16 degrees C

Car Driver Cocktail. (Someone has to stay sober) 1 tall glass,1 Tbsp ice,150 mls pure orange juice,75 mls sparkling grape juice,10 mls blackcurrant cordial. Place the ice into the glass,pour on the orange juice and follow with the sparkling grape juice.Then drip the blackcurrant cordial in and enjoy the effect. Garnish with fresh mint sprigs or a slice of orange.

Rhubarb Wine. This is a very old recipe and will need altering to suit modern day methods:For every 6lbs of rhubarb stalk, take 1 gal of cold boiled water. Wipe each stalk then cut into short pieces. Weigh & crush them well in a tub, pour over the cold water & leave in the tub for 4-6 days stirring well every day. Then strain and for each gal of liquid add 4lbs of sugar loaf sugar & the juice & peel of a lemon.Stir until the sugar has dissolved. As soon as the hissing noise ceases,strain into a cask,filling up to the top. Put in the bung tightly and leave for 3 months before bottling. A piece of sugar candy may be added to each bottle when bottling.
