Rhubarb Wine. This is a very old recipe and will need altering to suit modern day methods:For every 6lbs of rhubarb stalk, take 1 gal of cold boiled water. Wipe each stalk then cut into short pieces. Weigh & crush them well in a tub, pour over the cold water & leave in the tub for 4-6 days stirring well every day. Then strain and for each gal of liquid add 4lbs of sugar loaf sugar & the juice & peel of a lemon.Stir until the sugar has dissolved. As soon as the hissing noise ceases,strain into a cask,filling up to the top. Put in the bung tightly and leave for 3 months before bottling. A piece of sugar candy may be added to each bottle when bottling. Cheers meandog!! I have written down this recipe. It looks like this wine was made by wild yeast. I might add some wine yeast to the must. I love old wine recipes and especially this one. I started planting heaps and heaps of rhubarb.

Car Driver Cocktail. (Someone has to stay sober) 1 tall glass,1 Tbsp ice,150 mls pure orange juice,75 mls sparkling grape juice,10 mls blackcurrant cordial. Place the ice into the glass,pour on the orange juice and follow with the sparkling grape juice.Then drip the blackcurrant cordial in and enjoy the effect. Garnish with fresh mint sprigs or a slice of orange. I keep this one too. Wondering why the word cocktail is allowed!

This is the right time to make this for Xmas.
RUM POT
Layer dried or fresh fruit in a glass jar 1st layer equal weight fruit to sugar.After that ½ weight of sugar to fruit.Cover each layer with rum,build up to the required amount with fresh fruit don’t use apples,melon or citrus and rhubarb,to stronger flavours and to much moisture.Leave at least an hour between layers. Other spirits could be used. This is a traditional recipe from Germany named Romtopf.

PLUMS IN BRANDY.
1 kg Damson Plums 31/2 cups of Sugar Enough Brandy to cover the fruit. Large sterilised jar with a sealed lid. Wash and drain the Plums and prick with a sterile needle. Place in the jar stopping just short of the top. Pour Sugar and Brandy over,screw down lid,for a couple of weeks shake the jar once a day to make sure the Sugar has dissolved. Keep from Xmas to Xmas.

Must have been my lucky day when I popped into Woolworths for some shopping last Friday . There in the bargin bin were 9 cans of beer concentrate (Lion draught , Geordie lager) all dented and all for $6 each I've never used the Geordie lager before but I have made a few Geordie Sternhof lagers so I decided to put one down today using the same recipie as the latter . Geordie lager 1.5 kg Maltexo lager malt 1.5 kg boiled for 30 mins 15 grms Sazz hops steeped for 10 minutes Yeast as supplied and pitched at 22 deg I also put down a Coopers dark ale (never tried this kit before) Coopers dark ale 1.7 kg 250 grms Brewtech dark unhopped spraymalt 700 grms dextrose 500 grms liquid honey

Hi Ivyplus , I do have a still that I haven't used yet . I've been a little slack trying to get the cooling plumbing for it and trying to figure how it all works . However I visited Meandog last week and he had an excellant set up for a consistant water-flow , so now it's just a matter of me building something similar . Untill I do that , then yes beer is the only alcohol I make .

Hello smokemachine! Sometimes I wonder if we should try to get a still. But I am a bit worried that I do something wrong. I have heard it is not healthy when you drink the wrong flow. Do you know what I mean? Are there different stills?

CHERRY ALE Have just found this recipe in an old brewing booklet but haven't tried it yet: 2 lb (0.91kg) cherries (dark sweet ones) 1 lb (0.45kg) sugar 3 pints (600ml) beer or stout yeast (and nutrients) 1. Remove stalks, wash fruit and prick well with needle. (probably quite time consuming! ) 2. Dissolve the sugar in the beer and pour on the fruit 3. Add yeast and cover 4. After fermentation, strain well but do not crush the fruit, which can be used in tarts, trifles, etc...

In Europe they collect the fruits in summer and eat this on Christmas (their winter). It's so yummy with vanilla icecream.

It has been scientifically proven that if we drink one litre of water each day, at the end of the year we would have absorbed more than one kilo of
Escherichia Coli Bacteria found only in faeces.
In other words, we are consuming one kilo of shit However; we do not run that risk when drinking rum, gin, whiskey, beer, wine or other liquors because alcohol has to go through a distillation process of boiling, filtering and fermentation.
It is my duty to communicate to all of you people who are drinking water, to stop doing so. It has been scientifically proven that it is unhealthy and bad for you.
THEREFORE:
It is better to drink alcohol and talk shit than to drink water and be full of it!!
