1 pkt sweet short pastry (cut in half length ways) Place in bottom of greased baking tin and spread out. Place any kind of jam you like on top of it and spread out. Make a mixture up of... 2 eggs 5 tablespoons sugar Beat these together until fluffy... add 2 cups coconut and mix. Spread over jam. Bake in moderaste oven for 20mions or until top is golden. Another idea is to use fruit in the middle and also keep a little of the pastry to grate over top of jam before baking.

We would have to use an alternative to the coconut, such as almonds or hazelnut, as ivyplus is allergic, it makes her tongue swell and she can't talk much........ LOL, now you're just giving me ideas...

;D so funny. Not that ivyplus being allergic (sorry to hear this) I love coconut. I can see your mind ticking over time oasis. Ivyplus you could use some of the pastry on top or even make a sponge topping for it.

FLAVOURSOME FRUIT CAKE. 1 cup self raising flour 100 grams butter or margarine 3/5 cup castor sugar 1 egg 1 cup chopped dates 1/4 cup milk 1 1/2 cups chopped raw rhubarb Sift flour into bowl. Cut in the butter until the mixture resembles coarse breadcrumbs. Add sugar and dates, chop the rhubarb into small pieces before measuring. Mix both fruits through the dry ingredients until each piece of fruit is coated. Beat the egg until light and fluffy. Pour the egg into the dry ingredients and stir in enough milk to make a batter which will drop from a spoon. Place in a cake tin and bake at 190 degrees C. for 1 1/2 to 2 hrs. If the cake is starting to get a bit to cooked on the top place a bit of tinfoil or the oven tray on top. One can substitute dates for raisins as I do.

Hello meandog! I have tried your Flavoursome Fruit Cake!! It's the hit! Even Oasis likes it and he doesn't have a sweet tooth! I left the cake for two hours in the wood stove and it turned out to a most delicious cake. It was quite hard for me to sacrifice my rhubarb but it was worth it! ;D

Except the ones regarding the female species.LMAO I hope you get heaps of female dates!!! ;D I used raisins as well and it tasted soooo good. Because I didn't have any selfrising flour I used other flour and raising powder. It is a substitute for baking powder and doesn't have any aluminium in it. It works like baking powder. I will keep your recipe in my recipe folder.

Holunder Kuechli (little elder flower cakes) 150g flour 200ml beer (hopefully meandog can spare some!) 1 tablespoon oil 1/2 teaspoon salt (Or I guess even less) This is same as a beer batter. Mix all the ingredients and dip elder flowers into the batter and deep fry them. Sprinkle with sugar and/or cinnamon. Instead of elder flowers you can use sage leaves as well. They are called mice (when fried they look like a mouse)!

Heres an apple crumble,just add some rhubarb and delete some apple.LOL
Apple Crumble Pre heat oven to 190c Serve with whipped cream or vanilla ice cream Ingredients: 6 apples cored peeled and sliced zest and juice of 1 lemon 1/2 cup caster sugar 1/4 cup water 100gm cold butter finely diced 1 cup flour 1/2 cup brown sugar 1 tbsp ground cinnamon a little ground ginger if desired. Method: Put apples, lemon zest, juice and water into a saucepan. Cover, bring to boil and boil for 5 mins. Uncover and boil further 5 mins. When apples are tender, pour into deep over proof dish. Put the butter, flour, sugars and cinnamon in a food processor. Process till the mixture resembles fine breadcrumbs OR you can rub the butter into dry ingredients with fingertips. Spread the mixture evenly on top of the apples. Bake for approx 20 mins till browned and crisp.
