I'm so excited about making my first ever ricotta cheese. I decided to try the herb cheese and have flavoured it with garlic, spring onion, and lovage (strong celery smelling herb). After driving all over Nelson to find a cooking thermometer, I've done the heating thing and now it's all clumpy and cooling, ready to strain through the cheesecloth. If I can do it - anyone can. Please link to your recipe if it's here, Ivy, as I got it from your book! ;D
