A blood test suggests that I am gluten intolerant. Does anyone have any nice recipies? I am at the moment a bit struggling. It is more difficult then I thought to eat glutenfree. Especially the bread and cakes are not really the same.

I made this for dessert when we went to stay with friends whose daughter is gluten intolerant - we all enjoyed it!
Mocha Roll 125grms dark choc chopped 1 tablspn instant coffee, 2 tablspn boiling water, 4 eggs separated, 3/4 cup castor sugar.
Melt choc, stir in combine coffee & water, cool to room temp. Beat egg yolks and sugar for 5 mins until lemon coloured, beat in choc mixture. Beat egg whites, until soft peaks, then fold into choc mixture. Pour into greased, lined swiss roll tin (25x30). Bake in mod oven approx 12 mins. Cover with a damp cloth till cold. Turn out on greaseproof paper that has been dusted with cocoa powder. Fill with cream and roll up. This is kind of a strange texture, you're not sure if its fudge or sponge - very yummy.

Glutenfree Flour Mix 3 cups brown rice flour (fine ground) 1 cup potato starch (not potato flour) 1/2 cup tapioca flour 1 1/4 teaspoon guar gum or xanthan gum
Sift ingredients together, combining thoroughly. Use in place of flour in cakes and other baked goods.

Glutenfree flour mix I like this one the most.
1 cup rice flour 1 cup buckwheat flour 1/2 cup corn starch 1/2 cup maize flour (or corn starch) 1 cup tapioca flour 1 tablespoon potato starch 1 table spoon guar gum (which replaces gluten)
I mix all up and keep it in a airtight jar and use it instead of flour.

Banana MuffinsMy daughter made them today for me and they taste exceptionally good. 1 cup mashed bananas 6 tablespoons vegetable oil (she used olive) 1/2 raw sugar 1 teaspoon salt 1 egg well beaten 1 teaspoon vanilla essence 1 1/2 cups rice flour (she used the gluten free flour mix above) 2 teaspoons gluten free baking powder Add oil, sugar and salt to the mashed bananas. Add egg and vanilla. Add remaining dry ingredients. Mix until just blended. (Batter is runny). Pour into greased muffin tins. Bake at 200oC for 20 - 30 minutes. Chocolate pieces or chopped nuts could be added to the batter.

Finally today I made a good glutenfree bread which I would like to share with you. Glutenfree Bread (made in breadmaker) 60ml oil 450ml water 500g flour mix (see above) 1 teaspoon white vinegar 1 tablespoon raw sugar 1 teaspoon salt 1 1/2 teaspoons yeast 1 tablespoon semsame (optional) I mixed all together and filled it in the breadmaker. Baked on the fast setting, 750g, medium crust

Pear Tart 410g tin pears halves 1 teaspoon vanilla essence 150g soft butter 150g brown sugar 270g ground almonds 4 table spoons cream 4 eggs 2/3 cups flaked almonds (or roughly ground almonds) Preheat oven to 170oC. Drain pears well. Cream butter with sugar, then beat in ground almonds, cream, eggs and vanilla essence. Sprinkle half of the flaked almonds on the bottom of a baking paper lined 240mm pie dish. Spoon mixture over and arrange pears halves on top. Bake for 15 minutes. Sprinkle remaining almonds over the surface and bake for about 20 minutes more until golden and set. Cool and place on a plate. It takes really yummy.

OMG Ivy your creations are so god damn tempting (swallow) time for a snack. BTW - I'm getting asked more often these days if the products I sell are gluten free so I'm working with suppliers to create a special gluten free product range, this is going to be a slow process but I think worth the effort.
