Elderflower Limonade 5 liters of water 100ml vinegar 500g sugar 1 lemon (only unsprayed) 10 elder flowers
My mother made this drink every year for us children. It is quite sweet and should be drunk as a treat not appease thirst. Make sure you pick the right flowers. There are flowers which look similar and are not elderflowers. Check with someone who knows. Use bottled or cooled down boiled water. Wash the lemon and cut it into slices. Put everything into a foodgrade plastic or a ceramic bowl. Cover the dish with a towel and leave for 8 – 10 days. Fill into clean plastic bottles. This drink will fizz up like ginger beer and could burst the bottles. It is safer to use plastic drink bottles. The longer you leave the bottles the more the fizz will build up. Can be used straightaway.

Do you need to dissolve the sugar? Should the water be a little warm to achieve this?
