Digestive CookiesVersion 1.2 cups wholemeal flour (300g) 1 level teaspoon baking powder 100g butter 2 tablespoons sugar 1/4 teaspoon cinnamon 1/4 level teaspoon salt 1 large egg Version 2.¾ cup whole wheat flour (120g) ¼ cup all purpose flour (40g) ½ teaspoon baking powder 1 tablespoon rolled oats 75g butter 4 tablespoons brown sugar 1/4 teaspoon cinnamon 60-70ml milk Method for both types of cookies:Put flour baking powder and butter into a food processor and blend till fine and crumbly. Add the other ingredients and blend. Tip onto a surface and knead the dough until smooth. Make a roll and wrap with Glad Wrap and cool for about 1 hour. Cut into 7mm slices and put on to a baking paper lined baking tray. Bake at 220°C (200°C fan bake) for 12 to 15 minutes. The cookies should be pale golden and crisp. Transfer to a wire rack to cool. Store in an airtight tin.
